Hi. I'm David Mor.

Founder, Head Bartender in Charge

Full of zest. A little sweet. Never basic.

Based out of Chicago, my story has a cliché ring to it. Boy goes to theatre school, realizes he needs a job, starts working the overnight shifts at an IHOP, and falls in love with hospitality. You know that classic story of an actor that falls in love with campustown 4am pancake orders. Anywho, while attending University of Illinois at Urbana-Champaign, I began to serve and bartend in the evenings, and found an instant love for food, hospitality, and cocktails. I ordered an Aviation at a local hot spot and fell in love at first sip. I never looked back…and no, not because of a stiff neck. I graduated college, moved to Chicago, and let this newfound curiosity land me in Cindy’s Rooftop, where I eventually became their Beverage Manager.

After Cindy’s and some time at the award-winning Bad Hunter, I was fully prepared to solidify bartending as my career. By 2020, I had traveled the globe spreading the bartending gospel and butchering names, competed in a variety of cocktail competitions (and even won some), and have had the honor to see some of my work in publications like Forbes, Men’s Journal, Vox, and more. But, the world had other plans at this time: the pandemic hit, turning the hospitality industry upside down almost overnight. With everyone staying home for the foreseeable future, I decided to launch Mor Hospitality.

Hosting thousands of people in virtual happy hours, we focused on mixing in authenticity, community, and of course, humor, to deliver a memorable experience. And the feedback we received from clients was hot hot hot! There was a clear and immediate interest in learning about bartending and making cocktails, amplified with lots of laughs and piping hot tea (I’m always serving it).

After almost 2 years of regularly hosting these virtual happy hours, I was inspired to launch Head Bartender in Charge (HBIC). Being able to share why we shake versus stir, which questions annoy bartenders the most, and what it was like to make a Martini for a former President is a small peek into the genuine tabletalk of our classes. HBIC gives folks a chance to learn on their own time, at their own pace with a simple toolbox to improve their cocktail-making skills! I feel confident that you’ll learn a bunch just in your first login.

Although I live to serve a spicy marg, there is more to me than just bitters and bourbon. I am a proud member of the BeyHive and would proclaim my love for the Real Housewives (of any city) loudly and proudly in any setting. I also enjoy exercising and supporting my fellow thespians at the theatre. On the daily, you can find me dining and drinking at spots that make me feel cozy with my hospitality superhero fiancé, Matt. Oh, and I can’t forget about our purrfect cat, Prince.

TESTIMONIALS

Ed Hong
Module: Syrups, Infusions

Ed can currently be seen bartending at Maple & Ash in Chicago. Prior to stirring up Old Fashioneds and elegantly pouring Champagne at this bustling vibe of a restaurant, you may have seen Ed bartending at Celeste, teaching at the University of Wisconsin-Whitewater, or famously bartending at the award-winning Chicago bar, Prairie School. Don’t care about his bartending? Well then…he also manages properties, cooks and imbibes with a solid glass of wine, and ventures into a gym often, exerting mediocre effort.

Paige Walwyn
Module: Highballs and Spritzes

Paige can currently be seen as a Bartender at Queen Mary Tavern in Chicago, as well as the Creative Coordinator for OFFSITE. Prior to slinging drinks in Chicago, this fierce and talented bartender was whipping up cocktails at Clover Club and Existing Conditions. As one of the OG Head Bartenders in Charge, Paige offers our subscribers vibrancy and an ease in showcasing the nuances of mixology. Don’t care about her bartending? Well then…she also studies digital media trends, enjoys long walks and exploring new cities, and most importantly, watching reality TV.

Kyle Smith
Module: Shaking Cocktails

Kyle can currently be seen as the Bar Manager at Etta in Chicago, as well as the Founder and Creative Director of Dabney & Bullock Pop-Up Series. Prior to overseeing these programs and endeavors, you may have seen Kyle proudly representing Westward Whiskey as a Brand Ambassador or slinging drinks at the H Bar pop-up series he co-founded. We first met him while he was shaking cocktails at Cindy’s, inspiring his participation in Head Bartender in Charge. Don’t care about his bartending? Well then…he also enjoys running, art, and music, as well as being an overly competitive, yet mediocre-in-skill bowler.

Jake Kelly
Module: Cocktail Methodology, Art of the Punch

Jake can currently be seen bartending at Boeufhaus in Chicago. Prior to slinging drinks at this French-German steakhouse, you may have seen Jake offering his management skills over at Good Measure or Lazy Bird. We first met him while he was the Bar Director at Elske, making some of the most delightful and balanced cocktails in Chicago. Don’t care about his bartending? Well then…he also climbs, bikes, and scuba dives in his free time.

Liz Hitchcock
Module: Bar Tools, Riffing on Classics

Liz can currently be seen bartending at Sparrow in Chicago. Prior to whipping up rum cocktails at this Chicago gem, you may have seen Liz bartending at Billy Sunday, Berkshire Room, or Lazy Bird. Don’t care about her bartending? Well then…she also loves playing the piano, hanging out with her friends and dog, working out, and making [likely bad] art.
